When I think of Nordic cuisine, fish pops into my head. Hence, I chose to have a fish starter and main. For the big event I had halibut with sandefjord sauce, trout roe and fennel. It was absolutely phenomenal and I couldn't fault it at all. You will need to order sides at this restaurant as the vegetation on the plates is rather limited. Further, I'd recommend checking out the bathrooms and, in particular, the soap. They use the L:A Bruket range which smells so good! So good, I had to buy some for myself following my visit to the restaurant and am currently using it at home.

Sadly back to England now! When Aquavit, a three Michelin starred restaurant in NY announced that they were going to open up a restaurant in LDN, the hype was set! So we decided to go with a few of our friends for Ovo’s birthday. Rocking up to the restaurant in all black everything, ripped jeans, t’s and hoodies we felt somewhat judged by the older crowd in blazers and shirts. But, after sitting down it became clear they were in the wrong place as Swedish minimal techno was being played throughout the restaurant. We ordered a few bottles of wine to set us on our merry way. First up was a lobster salad that seemed to contain almost a whole lobster, full of colour and sweet, delicate, clean flavours. Truly gobsmacked at this desert known as an 'Arctic Birdsnest'. Originally formulated to bring the Nordic goats cheese parfait into the modern era of cooking. It compromises of a honey tuile nest, chocolate twigs, freeze dried fruit, chocolate brownie and shredded halvah. I can only describe it as a sweet and delicious crunchy pasta. Heaven on earth does exist!
